“The decision depends on the variety of the cheese; the judges are looking for a product that ticks all of the boxes and is the finest example of how that cheese is supposed to be. They’re looking for the style, the effect it has on your tastebuds, and how it works in your mouth.
“We can look at a cheese and feel it in our fingers, but what happens in the mouth is the most important thing. Mouthfeel, aroma and taste are all key, and the judges’ decision shows that Colston Bassett’s Whole Blue Stilton is the perfect example of a great Blue.”
