Cavern Aged Cheese

Dragon Wales’ new Dragon Handcrafted Cavern selection has been developed in partnership with Llanfair Slate Caverns near Harlech, adding a real depth of flavour to the brand’s premium selection of cheese. Each one is made to a bespoke recipe, and matured underground (in original mining caverns) over a number of months until selected at the perfect point by an expert grader. This off-grid, natural maturation chamber is not only ideal from a technical and environmental perspective, but has a conceptual resonance too, tapping into the deeper mythologies around Wales as an ancient land of folklore and legend. The range has a rich flavour true provenance, and its story is steeped in Welsh history.
