Get your free copySnowdonia Cheese Company has unveiled its first vintage cave-aged Cheddar, Rock Star, which will be available to wholesalers and independent retailers from 1st October.
Aged deep underground within Welsh slate caves in the heart of Snowdonia, Rock Star is encased in bespoke cobalt-coloured wax to celebrate the rocks of the historical mines where it is aged. The time spent underground gives the cheese a deeper flavour and denser texture, alongside a rich and savoury aroma. On the palate, Snowdonia says complex umami flavours and sweet caramel notes lead to a long finish with a savoury tang.
Richard Newton-Jones, commercial director at Snowdonia Cheese Company, said, “We’re very proud to introduce our first ever vintage cave-aged Cheddar. It’s a real labour of love to mature a cheese deep underground in such a remote setting and for us, it’s absolutely worth it.” Snowdonia’s cheesemakers explored North Wales to find the perfect location for the cheese’s 18-month maturation. “The flavour is stunning and the setting is incredible – it’s a real honour to work with the natural landscape in this way, surrounded by the majestic beauty of Snowdonia,” he added.
“Rock Star is sure to elevate special occasions with family and friends. It brings a real sense of luxury and wow-factor to the cheeseboard and we have no doubt it will prove an extremely popular addition to the Snowdonia Cheese range,” Richard concluded.
