Barber’s is the oldest cheese maker in the UK with 176 years of experience of making cheese at Maryland Farm in Ditcheat, Somerset. As guardians and producers of the traditional starter cultures once widely used, Barbers can claim that its cheeses have a totally unique flavour and character. Barber’s 1833 is matured for a minimum of 24-months to provide the Cheddar with powerful intensity, complexity and depth of flavour. It has a slightly brittle and crunchy texture that results from its long and slow ageing. Look out for Barber’s 1833 Vintage Reserve Cheddar, available in a 190g wedge, or a 1.2kg block for your deli counter.
