Graham Padfield and his family have been milking their own cows on Park Farm in Kelston for three generations, deciding to try their hand at cheesemaking in 1993. Today, The Bath Soft Cheese Company makes a selection of five organic cheeses. Its signature offering, Bath Soft Cheese, has a rich history, dating back to the time of Admiral Lord Nelson, who was sent a batch by his father as a gift in 1801. Other products include Wyfe of Bath (a semi-hard cheese that takes its name from Chaucer’s Canterbury Tales) Bath Blue, Bath Brie and Kelston Park (a white, mould-ripened cheese named after the parkland where the company’s cattle graze). As well as a farm and dairy, Bath Soft Cheese also runs a small unmanned shop, where locals and tourists pay for their cheese via an honesty box. Future plans include launching a hard, ‘Cheddar-like’ product and developing a range of unpasteurised cheeses.
