It is made by Atkins and Potts in its Hampshire kitchen, made using free range eggs and has a generous amount of butter to ensure a lovely smooth, rich sauce. It sells well all year round. Traditionally served over asparagus and essential for eggs Benedict, it also works wonderfully with fish or steamed vegetables.
