Get your free copySimon Weaver Organic is part of an exclusive group of six producers making the cheese; due to its PDO status the new cheese can only be produced in Gloucestershire on farms which have a pedigree herd of rare breed Gloucester cows.
The cheese is being made in co-operation with the Gloucestershire Wildlife Trust, whose farm and reserve at Bourton on the Water now houses a robotic milking system in which cows are free to graze and be milked at will. The unit was opened by Helen Browning, CEO of the Soil Association in August 2014.
“I am very pleased that we have been able to expand our existing herd numbers to allow for extra milk required for our cheese making. In doing so we have introduced a huge leap in cow welfare by utilising the latest technology at the same time helping to preserve one of England’s oldest and rarest breed of cow.
“The site is very public and we have installed large windows that allow walkers to watch cows being milked. It’s very rewarding on top to know that the cheese has had a great reception and that cheese with a real Rolls Royce provenance can catch consumers’ interest.”
